I have heard that canned have very little nutrients compared to other varieties.  So I usually use frozen or fresh and cook them a little bit to soften them up.

DEFINITELY FROZEN!!! Canned veggies have been processed to within an inch of their poor little lives. And sometimes frozen can be better than fresh, if they're frozen shortly after picking as opposed to being shipped for several days.

Definitely frozen over fresh.  Though with that said, there is a canned mixed vegetable with no salt added at our grocery store (carrots, peas, green beans, celery, lima bean) that is just veggies and water.  I use that when we are going to be eating out somewhere that won't have veggies.  I just let it sit in hot tap water for a couple of minutes - and since they are canned they are already soft enough to be a finger food.  HTH  :)
