cooking with alcohol

Hello

I know that there has been a post about this, but I can't seem to find it anywhere.

Just wondering if it is ok to give dd#1 who is over 2 food that had been cooked in alcohol.
My mom has a great recipe for ribs which involves boiling them in 1 bottle of beer and I wasn't sure if that would be ok for DD. I would think that all of it would be evaporated, but just wanted your thoughts.

Sounds fine as long as all the alcohol has evaporated. I cook with red wine a lot - when you add the alcohol, it sizzles a lot to start with, then calms down - that's the sign all the alcohol has gone :)

Any alcohol that you cook with is fine. The heat kills the actual alcoholic part :)

It is actually virtually impossible to cook all the alcohol out of food - below is an excerpt from a study comparing various cooking methods: 

A study conducted by the US Department of Agriculture’s Nutrient Data Laboratory calculated the percentage of alcohol remaining in a dish based on various cooking methods. The results are as follows:

 Preparation Method Percent of Alcohol Retained
alcohol added to boiling liquid & removed from heat 85%
alcohol flamed 75%
no heat, stored overnight 70%
baked, 25 minutes, alcohol not stirred into mixture 45%
baked/simmered, alcohol stirred into mixture:   
15 minutes -  40%
30 minutes -  35%
1 hour -  25%
1.5 hours -  20%
2 hours -  10%
2.5 hours -  5%

I slow cook hams in beer all the time and don't worry about it.
