I've been following this thread and have lots of new ideas. Here are some regulars at our house:
Popeye pasta (I received this recipe from fellow bw's)
4 oz frozen or 8 oz fresh spinach, washed
2 oz tiny pasta shapes, uncooked
1/2 oz butter
2 tablespoons milk
2 tablespoons cream cheese
1.5 oz Gruyere cheese, grated (Note: Gruyere is unpasteurised and worried about that, so I use cheddar or any other cheese - i don't think it actually matters what cheese you use - it just makes it taste slightly different)
Cook the spinach following packet instructions or, if fresh, with just the water clinging to its leaves in a microwave or in a saucepan over a low heat until tender. Press out the excess water. Cook the pasta according to the packet instructions. Meanwhile, melt the butter in a small frying pan and saute the cooked spinach. Combine the spinach with the milk and cheeses, and chop finely in a food processor. Mix with the cooked pasta.
Note #2 - To save time I don't saute the spinach in butter...and never really noticed a difference
Chicken Nuggets1. Dip chunks of chicken breast into a bowl of one egg white, slightly beaten. (I usually tenderize the chicken first)
2. In a plastic bag, mix:
½ cup plain bread crumbs (can include wheat germ here)
1/8 teaspoon salt
1/8 teaspoon pepper
3 Tablespoons parmesan cheese
3. Put chicken pieces in bag and shake to coat all sides.
4. Bake at 400 degrees for 15-20 minutes.
Salmon Cakes1 Can of salmon
¼ teaspoon salt
2 teaspoons grated onions
1/8 teaspoon pepper
1 egg, lightly beaten
½ dill (optional)
flour
8 soda crackers, crushed
oil (for frying)
1. Mash salmon, bones and all, in a bowl with fork.
2. Add onion, egg, salt, pepper and dill (if used)
3. Blend well.
4. Crush soda crackers and add to the salmon, mixing well.
5. Add just enough crumbs to make a mixture that will hold its shape.
6. Make patties and dip each in flour or more cracker crumbs to coat both sides.
7. Heat oil in heavy skillet.
8. Add patties and fry slowly until golden on both sides.
9. Drain excess oil on paper towel and serve.
Baked Salmon4 (4 oz) fillets of salmon
3 tablespoons prepared Dijon mustard
Salt and pepper to taste
¼ Cup Italian-style bread crumbs
2 tablespoons butter, melted
1. Preheat oven to 400 degrees. Line a shallow baking pan with aluminum foil.
2. Place salmon skin-side down o foil. Spread a thin layer of mustard on the top of each fillet and season with salt and pepper. Top with bread crumbs, then drizzle with melted butter.
3. Bake in a preheated oven for 15 minutes, or until salmon flakes easily with fork.
Spinach Meatloaf2 eggs
1 (10 oz) package frozen spinach, thawed
1-1/2 lbs. lean ground beef
½ cup milk
½ cup oats
1 teaspoon salt
½ cup wheat germ
½ teaspoon pepper
½ cup shredded carrots
½ cup steak sauce (or ketchup)
¼ cup onions
1. Mix everything together – EXCEPT steak sauce or ketchup
2. Shape into a loaf and bake 45 minutes at 350, add steak sauce at last 10 minutes
Note: It might be my oven but I have to bake it an 1-1/2 hrs.
Zesty Baked Fries¼ cup grated parmesan cheese
1 tablespoon olive oil
2 teaspoons basil
1 teaspoon oregano
1 teaspoon garlic powder
4 medium red potatoes
1. Mix first 5 ingredients
2. Cut potatoes in sticks
3. Toss potatoes with cheese mixture.
4. Place on baking sheet coated with cooking spray.
5. Spray potatoes lightly with cooking spray.
6. Bake at 425 deg. For 15 minutes, turn potatoes over and bake 15 more minutes until crisp.
