Does anyone have a good recipe for a wheat free, egg free, dairy free birthday cake??? Seems like a total impossibility to me! Also, if you know of a cake frosting with the same restirctions.
Thanks.

This used to be a sticky and I think I accidentally unstickied it. This link now is at the top of the allergy forums.
I think this recipe will work for you. Spectra (Melanie's) son has an allergy to egg. The B-day cake she made is free of everything you need it to be.
I am sure she will post.

Wow, sounds like me 3 months ago when I was in desperate need of a recipe lol. I find this recipe is great, but it really doesn't rise/grow during baking. So if you want a decent size cake I'd double the ingredients.
Vanilla Cake
# of Servings: 2 Layer 8" Cake
Ingredients
2 cups white rice flour
1 cup brown rice flour
1 3/4 cup sugar
1 1/4 cup water
1/2 cup shortening
3 Tbsp water, 3 Tbsp canola oil, 2 Tbsp baking powder, mixed together
2 1/2 tsp baking powder
1 tsp salt
1 1/2 tsp vanilla
Instructions
Preheat oven to 350 degrees F. Grease and flour 2 8" cake pans set aside.
In a large bowl, combine all ingredients. Using an electric mixer, beat until all ingredients are well mixed, about 4 minutes should do it.
Immediately pour the batter into the 8" cake pans. Bake for 40-50 minutes, until tooth pick in center comes out clean.
Cool the cakes in the pans for about 10 minutes before removing them to a wire rack(s).
Only frost when completely cooled.
Substitutions
Use dairy, egg, soy, corn, wheat and/or gluten free ingredients as needed.
This recipe is free of:
Milk Peanut Egg Soy Tree nut Corn
Gluten Wheat Fish Shellfish Sesame

Thanks for the Bday cake recipe. Even if she won't eat it at least we will get to see her make a mess of herself without having to worry about any reaction.

Hehe, yeah, that's what I did. I put it in front of him, the whole cake, so he could play with it. I bought another cake for everyone else that tasted much better lol.
