Title: Ideas for green veggies into a toddler?

Stan will eat nearly anything, so this is really a failure of my imagination - I've got loads of recipes that he loves which are full of ORANGE veggies, and RED veggies, but there seems to be a lack of GREEN in his diet right now...

Does anyone have any ideas for foods that are heavy on the green veg? No need for recipes, just ideas to set me off?

Spinach in things like pasta, lasagna. Peas are always a winner in this house ;D I put them in a lot of things like spag bol, casseroles, bakes, stir frys.  Spinach is good in stir frys too though I have found it has only been recently that Ryan has taken to this.  Cucumber sticks with dip. Home made guacamole (sp), Califlower cheese is also a hit here!

Stir-fry!  I put all sorts of veggies into it.  I try to make it as colourful as possible and they really like it.  DS is beginning to try Romaine lettuce but only if it is dressed in Raspberry vinaigrette or Creamy poppyseed.  Some greens that are popular in this house are:  spinach, lettuce, peas, broccoli, string beans, sugar peas, cucumbers, various chinese leafy veggies.  I found that when I introduce a new veggie and it is cooked/presented in the old/familiar way then they are more likely to eat it.

Jessica Seinfeld's book, Deceptively Delicious is all about sneaking great veggies into kids' meals... It has tons of recipes that taste awesome!

DS loves green beans, edemame, peas, green peppers, sugar snap peas and avocado  Broccoli and spinach are hard for him to eat, he usually fishes them out of his mouth at some point.

Ditto to ideas above, I make casseroles and Nick will devour anything thrown in. I use a lot of green beans, peas, broccoli, some lima beans too.

Pureed spinach and broccoli and kale can be mixed with guacamole, and they also go well in cottage cheese. :) Josie used to snarf it down that way, then went off cottage cheese for a couple years, and now she has consented to eat it again. It's also good with pesto, which uses lots of basil, which is.... A GREEN LEAFY THING!!!! :)

Oh I forgot to mention James loves asparagus.  It is really kind of crazy how much he likes it.

Spinach! Brilliant stuff, I can put it in anything - ds doesn't even know that scrambled eggs come without the green bits yet ;) It's also great for snipping into things like pasta sauce and risottos

Thanks for the fab ideas everyone. I gave Stan some broccoli and green beans with his fish fingers last night, but he rejected the WHOLE LOT. Think it was because the first bite I gave him was a bit too hot  :'( He was self-feeding the beans in a half-hearted way, but I think some went down.
Pasta bolognese for tea tonight, will add in some spinach.

DD will spend HOURS picking bits of cooked spinach out of anything, but I use my fine grater and grate zucchini into ground meat for meatloaf, spagh. sauce, or burgers.  It pretty much disappears after cooking and keeps things very moist.  (also stretches your meat, for us who are CHEAPSKATES)

i have a great simple recipe for mini meatloaves with just ground beef or turkey, an egg, seasoned breadcrumbs, and grated zucchini - bake in a cupcake tin, perfect little portions and always gobbled up.

Uh, basically that is the recipe, I eyeball it.

For about a pound or a pound and a half of ground beef, you mix in one egg, grate in 1/2 to 1 medium zucchini or yellow squash (I like to make it nearly half and half) and about 1/2 to 1 cup of Italian seasoned breadcrumbs (or regular breadcrumbs + about a tsp of Italian herb seasoning) - depending on how wet it is.

Spray the cupcake tins lightly, fill just to the edge, top with ketchup if you like, but they are good without it too, and bake 20 minutes at 400 degrees.  Adult serving is 2.

meat loaf and taco meat and meatballs are GREAT dishes to hide anything in! even if you have to puree it before you add it! that deceptively delicious book is all about how she purees all sorts of things -even wierd stuff like beets, she puts it in cake! wow! - and hides them in maine dishes and sauces. kiddos never know it's there b/c it's pureed. brilliant!
ds isn't too terribly picky or i'd pick up a copy myself..... ha! i might do it anyway!
you might try avacado though. ds LOVES the stuff! if he refuses anything i always keep one around so i can toss it at him! just serve it up out of the shell. it's packed full of good fats and nutrients!
don't know how old your lo is but with my ds alot of his veggies have to still be cooked super soft or he won't eat them.

Stan really isn't all that picky but avocado is one thing he WONT eat LOL. I love the stuff myself. It's more me who has trouble coming up with ideas for varied, nutritious meals than him being picky.

:)ds isn't really picky either but i can't seem to get him to eat squash. well, he likes the winter squash -butternut i think -but that's it and i sure won't eat the stuff so we just kind of let that one go once he moved out of the puree stage! it is hard to come up with ideas for meals, especially when they don't particularly sound good to you.with me being pregnant right now it's been tough b/c sometimes nothing appeals to me! and i just kind of throw a smorgasbord of stuff on his tray.
me -it's A time i have a hard time with. it's like i forgot how to pretend or something! jeez, how do you forget how to play?? i did stick him on a blanket and pull him around the living room today b/c it was cold out. he liked that, for all of 2 minutes. then he was off again!
we tend to stick to broccoli alto! he loves the stuff. then after like 4 days i wake up and realize he might like some other kind of veggie. i can't wait til he has more teeth! i want to see what he thinks of cabbage!i love the stuff raw! it's all sweet and crispy! yum!

We cook a lot of fried rice, and put veggies in it (grated so they are teeny tiny) and she'll eat it. But she will not eat veggies on their own. I try now to say "you need to do three mouthfuls" or "just try it" as she's older now and kinda gets it, but I try not to get too hung up on it.... easier said than done!

Rory eats frozen peas for a snack.
Also we add peas or baby spinach leaves to mini pizzas. Lots of vegie content can go on them.  :)

how simple is this!! Why hadn't I thought of it before, perfect for Leobin who refuses to be spoon fed   ::)

re grating vegies, works well for zucchini in spaghetti bolognaise and risottos, I also add pureed pumpkin which gives good taste but also lovely colour.

I made the mini-meatloaves and they were fab! The ketchup layer is inspired. I added some grated cheese on the top towards the end of the cooking which was lovely. And I reckon a bit of lemon juice in the mix could be nice too. Will definitely be making them again. Thanks for the recipe.

sounds yum!  ooooo, cheese!

we started "buying" bites of veggie with grapes.  Dont know if its bad precedent, but when she's really reluctant I started offering 1 or 2 grapes according to how big the veggie piece is.  We did BLW, so she eats pretty regular=sized pieces now.
