You do have to sign up and it is a $25.00 yearly fee, but so worth it for the recipes and support.

Hey Melanie:
Did you taste this cake? Did Hudson like it?
I think I am going to use this recipe for Tyler's cake. Of course since it has sugar, I want be able to give him fruit that day, but I don't care.

Hehe, yeah I tasted it. It was good, different, but good. Keep in mind it doesn't rise, so if you decide to make a layer cake or are having a big cake I would double the recipe. It can crumble easily so be careful when taking it out of the pan. Probably because I used a weird shaped pan the end of the dinosaur's foot fell off, but the rest stayed together, just had to be more careful as it is not as gooey moist as regular cakes. I greased the pan with the shortening then sprinkled the rice flour all over it, then dumped it over to get rid of the excess, and it helped big time. The icing was alright, I found it pretty sweet and not easy to decorate with, probably would've worked better if I could have found margarine that didn't contain soy or dairy, but with shortening it's just not the same.
My daughter who is 2.5 ate her piece of the cake if that helps! :D She thought it was great lol.

Thanks so much. I am either going to do this recipe or a recipe I found for a dairy/wheat free carrot cake.

I made this cake for my son's 1st Birthday party. He could not have: Milk, soy, wheat or sugar (only a natural sugar source).
I tasted it and it was really good. I think I would add a little less honey though.

Wet Ingredients:
- 1/2 cup apple sauce (homemade), I pureed 2 apples
- 1/2 cup honey
- 1/3 cup olive or grapeseed oil
- 2 eggs (OR) if can't have eggs: 2 tablespoons ground flax seed soaked in 6 tablespoons of water
- 1/4 tsp. of sea salt
- 1 tsp cinnamon

- 1 cup whole grain spelt flour, rice flour or kamut flour or a combination (I used brown rice flour only).
- 1 raw carrot, grated
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1 tsp. xantham or guar gum
- 1 cup crushed pineapple (fresh)
- can add nuts if want to.
In a bowl, mix together the dry ingredients. In a seperate bowl, mix together the wet ingredients. Add dry ingredients to the wet indredients and mix.

I have an egg allergy and my Mum used to make this for me every birthday and I recently made two for my daughters 1st birthday and both disappeared in no time (it was the adults eating them...but my DD loved it too!)
EGG FREE APPLE CAKE
8oz peeled apples (plums, apricots or bananas can also be used)
8oz of self raising flour and 1/2 teaspoon of baking powder
or any plain flour (could use wheat free) and 2 teaspoons of baking powder
pinch of mixed spice
pinch of salt
3oz marg
3oz sugar
little bit of apple juice to mix
Cut apple into small pieces. Suive dry ingredients. Rub in marg. Add sugar. Stir in uncooked apple. Mix well with a flat bladed knife. Add apple juice to make a sticky consistency. Put in a well greased/floured 7" cake tin and bake at 190deg for one hour.

Great! Both recipes look yummy! Thanks!

Hi! We've got a fantastic cookbook that we just couldn't live without - Allergy-free Cookbook, by Alice Sherwood. Each recipe can be made without one or more of the 'big four' allergens - eggs, dairy, nuts and gluten. It's become a godsend for adapting food for ds1 (egg & peanut allergy). I can personally attest that the meatload, moussaka, fairy cakes, chocolate layer cake, peach-topped cheesecake & carrot cake are family favourites.

Wow, that sounds great! Thank you!

This is from mashimaro's post, thought it would be useful to add here too:
For those of you who don't know, there is a famous bakery in NYC called Babycakes that makes desserts that are all gluten free, dairy free, soy free and egg free, and almost all of them are sugar free as well. Most everyone I have ever known who has been there has been overwhelmed with how amazing this place is and how wonderful the cakes are.
Well, they are now coming out with a COOKBOOK!! It's available on amazon, out in the UK in early May for 15 pounds, and can be pre-ordered now.

1/3 cup white sugar
1/2 tsp salt
2 tsp baking powder
2 tbs vegetable oil
Method:
In a large bowl mix together cornmeal, soy milk and vinegar and let stand for 10 mins. Add the rest of the ingredients and mix together well. Bake in a greased 9" square pan @ 420 F for 25 mins or till toothpick inserted in a center of a bread comes out clean.
