My LO is on a diet free of wheat, dairy, soy, and eggs. He turns 1 this week and we are having a party for him tomorrow. I managed to find a cake recipe free of these things are there is a frosting mix at the store free of them, but it says to add margarine. Does anyone know what I could use in place of this or does anyone have a recipe?

There are dairy free and soy free margarines, if you can find them. All the recipes I looked at asked for this, but I could never find it, then again I am in a smaller city in Canada. Or you can use shortening, and find one soy free, that's what I did. Keep in mind that he's only turning one, if the cake doesn't have icing he won't notice. I worked real hard making him a cake and he didn't even touch it ahahahaha!!! Thankfully we had a back-up cake for the guests, because the rice flour cake with shortening icing wasn't a HUGE hit with the adults... lol
Here is the ingredients I used::
4 cups powdered sugar (1 pound)
2 Tbsp water, or rice milk
1 cup shortening
1 tsp clear vanilla extract
1/2 tsp butter flavoring (optional)
paste food coloring (optional)

mmom, do you mind sharing your cake recipe? I know Vikki, Dylan's mom is looking for a dairy free one and so am I. H turns 1 in 2 weeks...EEK!

Chocolate cake:
3 cups flour (I used a brown rice flour combo)
2 cups sugar
6 tablespoons cocoa
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil ( I used canola)
2 tablespoons vinegar
2 teaspoons vanilla
Directions:
Preheat oven to 350 degrees. Mix dry ingredients first. Once the mixture is even, mix in wet ingredients. Continue mixing until you obtain an even batter (no lumps). Pour into a cake pan and bake for approximately 40 minutes. I recommend topping the cake with Chocolate Frosting by Sarah (on the vegweb).

One mum over on the other post also suggested coconut oil (which is solid at room temp) rather than shortening. I use nuttelex instead of butter (in Australia), it's dairy and soy free.
Oh hjrmom I posted on other thread too, but don't see why you couldn't leave out the cocoa, just add a little more flour to make up for the difference and more vanilla or whatever flavour you want (adjust for the difference in liquid if you add juice or something as a flavouring)...I would do a tester first and see how it goes, just make them into cupcakes instead so everyone can share :)

My sweet girl just turned 1 last week. She has tons of allergies. For her frosting we did a choc mousse using avocado instead of milk. It was avocado, cane sugar, and unsweetened cocoa powder. keeping it in the fridge for a while really helped and it was pretty tasty!! If you can't do chocolate you can add vanilla extract I'm sure. we have to be careful w/that because of a corn allergy as there are corn byproducts in vanilla extract..

You could make a glaze icing out of icing sugar and water - just slowly add a few spoonfuls of water to a bowl of icing sugar, and a small drop of vanilla. Keep mixing until it is smooth, and then use it to glaze the cake when it is still warm.
In the UK there is a dairy free, soy free spread made by "sure" - it's what we used and DS really liked it. It does seem like it's really just a solidified vegetable oil, but it functions well in place of butter wherever needed!

I have heard of pudding with avocado, but never frosting. That is a good idea - kind of makes it healthier. My SIL has the book "Deceptively Delicious" because her son won't eat anything other than PB&J for meals. One of the recipes has avocado as the base in the pudding.

I made the frosting and it was on the runny side, but very tasty. :)
