Title: need a dairy/soy free cake recipe

ds2's first bday is rapidly approaching. he is mspi. wondering if any of you have a dairy/soy free cake recipe that actually tastes good??

he is fine on wheat and eggs now so that gives me a few more options. looked on the net for ideas but would prefer to go with a tried and tested recipe.

was just thinking the same - for my DS 2nd birthday next weekend. .... bought a gingerbread cake for a friend the other week (for him, his DD and DS to share!!!) but it is too small for DS's party!!

thanks malenka - is it edible enough for guests to eat too? DS happily eats dairy free things that DH and I wouldn't (and DH eats most things!!!)  :o

Look forward to seeing the recipe and hopefully trying it out  ;D

I've got a fab recipe! So easy and yummy an dI make it even now that I'm not on a restricted diet!

1 1/2 cups flour
3T coca
1t baking soda
1 c sugar
1/2 t salt

Sift all these dry ingredients twice.
Make 3 holes and put 1t vanilla in one hole, 5T oil in another, 1T vinegar in another. Pour 1c water over the top and stir.
Cook for 30-40mins at 180deg.

I have a recipe for chocolate chiffon cake that we always make for birthdays.  It is one that is originally no dairy/soy and it's a huge hit.  It's a bit involved as it calls for 7 eggs, separated, have to whip up the whites, etc.  It bakes in a tube pan.  Let me know if you're interested and I'll post the recipe.

Martina gave me this one for Dylan's birthday and it's FANTASTIC!!  Everyone at the daycare and our family party loved it, including my chocoholic DH :)  It uses canola oil for the fat, so it's dairy/egg/soy free!

bless you ladies, thanks for all the recipes. think i will have a few trials and then pick one for his cake, what a shame if i have to try them all first right ;)

bethaney, would LOVE the recipe please :-*

also, what do you use for df chocolate?? i'm having trouble sourcing anything that is also soy free other than the 70% dark chocolate...
i was thinking of making a giraffe shaped cake but it uses melted chocolate to create the spots. any ideas for a substitue or way to lighten the look of the dark choc?

Kirry, so glad I stumbled upon this thread! I'm going to have to try some of these recipes!!! DD2 is MSPI among other issues so no eggs (and I think we're going to have to go to no wheat, too, to rule that out :-\ ) either. 

Do you have rice chocolate available to you?  There is a brand that I get called Enjoy Life. All their products are free of the top 8 most common allergies.  It is definitely a good substitute for chocolate for me.  They also make chocolate chips, too, that are dairy/soy, etc etc free.

I don't know much about carob....but carob chips??

he's been ok on soy as emulsifier, is that the same as soy lecithin?

I can't remember what soy lecithin actually is, but I know it's not the protein which is what soy intolerant/ allergic people react to. It's apparently very rare to react to lecithin. It would expand his diet if he can have it! And hopefully more chocolate possibilities! We have chocolate here (including a supermarket brand of chocolate chips) that are dairy free and just have soy lecithin in them.

My recipe is the same as Edesanja's, but instead of making the wholes etc, I just dump everything in one bowl, mix, and pour in a cake pan. Easiest cake ever and it's still very tasty. Sometimes I add a handful of chocolate chips (so maybe carob chips?) or some sour cherries - it makes it taste like a black forest cake. Yummm

I always wondered if making the holes was necessary or not!! I put choc chips in to sometimes. Or canned boysenberries. Yum!

Chocolate Chiffon Cake
¾ C boiling water
½ C cocoa
1 ¾ C sifted flour (I measure, sift, measure again)
1 ¾ C sugar
1 ½ tsp soda
1 tsp salt
½ C oil
7 egg yolks
2 tsp vanilla
7 egg whites
½ tsp cream of tarter
1)    Combine boiling water and cocoa; set aside to cool
2)   Sift flour, sugar, soda and salt together
3)   In another bowl, mix oil, egg yolks, vanilla and then add the cooled cocoa mixture
4)   Make a well in the dry ingredients; add the liquid and mix until smooth
5)   Using a mixer, beat egg whites and cream of tarter until stiff (you should be able to run a spatula through and it parts and stays stiff)
6)   Drizzle the batter into the stiff egg whites very gradually while very gently folding it in with a spatula
7)   Pour into an ungreased 10 inch tube pan and bake and 325 degrees for 65 minutes.
8 )   Turn upside down to cool immediately upon removing it from the oven.  Wait until completely cooled before removing from pan (I run a knife around the edge to loosen it).

still cant find any dairy free choc other than the lindt 70% dark, very jealous of all the other types you all mention!
