Title: Sals in Gum arabic?

as title does anyone know if Gum arabic is high low or moderate sals?

Thinking hard about my babas first birthday cake and I was contemplated edible glitter it seems its probabaly made from gum arabic (sp?) but obviously it depends on the sals of it
