Title: Suggestions for red cabbage...?

It arrived in our veg box delivery and I'm stumped!  Suggestions?  Please!!!

Traditionally for adults I'd cook with apples, brown sugar and red wine vinegar for a long time so maybe for little ones cook with apples and some water?  Or maybe some coleslaw?

DS ate a huge mound of red cabbage when we went out for dinner last week.  I decided I better buy some (I never buy it usually) as he liked it so much.  anyway, boiled some up yesterday, drained added a knob of butter and some black pepper and stirred through on the hob for a few mins.  It was quite plain but nice.  DS refused to even taste a piece.  It looked identical to that he ate in the restaurant so I don't know why he decided not to try it.

I think it would be nice as a spring roll filling (along with bean shoots and shredded carrot) if you like making that sort of thing.  Otherwise I'd just serve as a side for something hearty and warm like a stew with dumplings.

Coleslaw! We mix it with white cabbage and make a lovely fresh crunchy coleslaw...yum
