I'm going to attempt cutting dairy from my diet for a week,to see if it makes a difference in the fussiness of my 6.5 mo. (He's never had formula, not keen on bottles, and having solids twice/day.). My question is do I need to be concerned about things like bread that were made with milk, have it baked in? Or, just cut straight milk, cheese, ice cream, butter....?
Also, how long do you typically notice a difference in baby, if there's going to be one?

Some people notice the same day, others in a couple of days, others not for several days. It'll depend on baby's sensitivity to dairy. The proteins can stay in your system for up to 2 weeks, and once those are gone up to another 2 weeks to fully leave LO's system.
But you might find that a day or 2 without dairy will give you a good idea if that was the problem, especially if you wait a few more days and then add some in on purpose to see if it triggers the same problems.

You may find you can get away with obvious dairy being eliminated, but be aware that you may then need to cut hidden dairy if you don't see an improvement (or that is certainly as I understand it)

I'm not even sure that there is a dairy issue, but questioning it due to fussiness and gas that never seems to go away. I've also noticed some poops and spit ups looking mucousy (at least I think so). Figure it's worth a. Brief trail, to rule it out...

In my case it took around 6 days, and I did avoid hidden milk products because a couple of times that I had some, she had a bad diahrrea and even some blood strands. But this condition lasted until she was 7 months, by then I tried goat's cheese and worked out well. Around 10 months I started taking dairy again and she was fine. Other thing that my LO showed with her allergy was a rash if we touched her after handling cheese, now I'm struggling with soy too so it seems we're staying with almond and coconut milk.

We found it helped a little after a couple weeks, but the milk protein don't leave your body completely for 2 weeks after you start. then it can take 2 weeks after that to get out of the babies body.
