Title: pancakes or muffins using baby cereal (for extra nutrients....)
Post by: shirat on October 08, 2013, 18:06:50 pm
I never know what to offer for breakfast for my 10 month old. it seems to be dry cheerios every day. she doesn't like her baby cereal anymore- only finger foods. Any one have a recipe that includes baby cereal into a pancake or muffin for breakfast?

My first LO loved these? And I just changed the recipe up a lot to keep him interested. It's not rice cerial but it's baby muesli :-\ http://www.forbaby.co.nz/Stage-4/Recipes-for-Toddlers/Muesli-Sultana-Apple-Muffins

I was going to post a recipe but looks just about identical to pp.  You don't have to put the sugar in that recipe btw, for under 1yo it would be better to omit it totally, the apple sauce and sultanas will sweeten them plenty.  Actually, my recipe is a bit different I just noticed mine doesn't have egg.

1 1/2 cup SRF
1/2 cup baby muesli
1/2 cup sugar (can leave out)
2 tbl sp sultanas
1 tsp cinnamon
1/4 cup milk
1/3 cup oil
120g stewed/baked/steamed apple

Oven 180 c

combine dry ingredients
add wet ingredients
stir until just combined (do not over mix)
spoon into muffin tins
bake 12-15 min

can be frozen
