I am feeling a bit thick here and silly for even asking but I must have missed something. On the posts in the forums there are messages on the left hand side. How are they generated? How can I modify them? Why do some people have additional messages and how do they get them? ??? ??? ??? ??? ??? ??? I feel like a real idiot for asking but could you tell me all the same - thanks ;D

If you click on the profile button that you see just underneath your user info dialogue box at the top of the screen, you will find the page to edit your profile details.
On the left is an option called forum profile information - click on this.
There are 2 options on this screen that you can complete:
Personal text - this is displayed just underneath your avatar. I've typed Hi everyone! on mine.
Custom title - this is displayed just underneath your username. Mine reads Potty training.
When you've finished, scroll to the bottom of the page and click on change profile to save the changes.

How about the 'appreciation' and 'thank you' bits? Where/when are they generated?

Showing Appreciation & Thank You! is a permanent feature. It allows members the opportunity to say a Thank-you for something you've written or replied to on the boards. On your profile you'll only see Showing Appreciation, but not Thank-you, this is because you can only give Thanks to someone else and not to yourself. The number after Showing Appreciation is the number of people that have Thanked you.
