Tinned tuna, pasta spirals (with or without pesto) and cherry tomatoes seems to be the favourite here at the moment, but anything on this theme really - what I would say is that what seems dull and repetitive to you might not be so for your lo, Freya has been eating cheese or ham or tuna pasta salads for lunch for the past 2 years and still enjoys them!
As a warm lunch we often do scrambled egg and baked beans on toast, or a cheese and (softened) vegetable omelette:
fry some diced red onion, red/yellow/green pepper, and mushrooms in a tiny bit of olive oil over a medium heat until softened, set aside,
beat 2 eggs until frothy and place in hot pan,
when the base has set but the top still runny put the veg on top of one half of the circle,
sprinkle some grated cheese on top, fold the other half of the circle over the top to form a semicircle omelette sandwich,
flip over after a couple of minutes, cook for another couple of minutes then serve in strips or squares,
whatever's left over you can eat or refridgerate until the following day!
