I would just use expressed milk to make the pancakes!

The recipe I use does not require eggs and as I said I no longer follow a recipe - a big cup of rice flour and then slowly add milk (expressed BM would be okay) and stir, slowly adding more milk as needed until it is a nice thick, smooth batter. It should be very thick, not runny.  Ad a tiny spoon (like a finger pinch) of baking soda (bicarbonate of soda) so they will rise.  I also add a pinch of cinnamon and a tiny pinch of sugar for taste.

Heat a bit of oil in a pan and spoon the batter into the pan in small pancakes.  The pan needs to be very hot. When they start to bubble on the top, flip the pancakes and cook anther 2 - 3 minutes.   VERY easy recipe!

Absolutely! On the neocate website it actually says rice flour or any other 'permitted flour', so you should be fine :)

I make them with:
1 egg
4oz self raising flour
1oz caster sugar (will not add that much if for DS)
1/4 pint milk

They are the small, fatter ones (drop scones).  Mix all together and cook in frying pan with little bit oil/butter to stop sticking!  Yum!!!!!!!!!!!!!!

You are welcome!  We like them too!!!

My friend adapted them (well completely changed them!) to make them healthier and they seem nice too (not tried them but DS has!):
1 weetabix
1 egg
3oz flour (they use wholemeal, but can use self raising instead)
1/3 pint of milk

Think you just crush the Weetabix and mix it all and cook like before.  They again are the drop scone ones rather than crepes.  Not tried making them myself yet ...
