mashi--I'm trying to keep DD gluten free, so I use a little bit of cooked millet in place of the bread crumbs. Then I put some millet in my coffee mill and grind it to use for the coating. It's similar in texture to corn meal, so I bet that would work. Personally, I think if you're going to fry, the coating is important. If you're going to bake them, you could probably skip the coating.
