I finally made these today. I wanted to note my variation, which turned out quite well.

I used ground turkey and fresh sage with the apple, bread, and onion.  Made a big batch for DD (11 mos) but DS (3 yr) kept snatching them while I was cooking them up.  They were great, and I love that they are not loaded with sodium! (Thanks for the recipe!)

i use ground turkey too - find that works much better texture-wise and they stay together well.

really, I think the apple adds more moisture than anything.  Keeps them from drying out, making them easier for a lo with texture issues.  It didn't really seem sweet to me.  Just my opinion.

Will I have serious problems if I try to fry these without coating in flour first?  Or will cornflour work do you think?

mashi--I'm trying to keep DD gluten free, so I use a little bit of cooked millet in place of the bread crumbs.  Then I put some millet in my coffee mill and grind it to use for the coating.  It's similar in texture to corn meal, so I bet that would work.  Personally, I think if you're going to fry, the coating is important.  If you're going to bake them, you could probably skip the coating.

Yes, I am keeping DS gluten free (as you know from the post where you suggested I try the recipe with millet!)  Cornflour is what you call cornstarch in the US (I am pretty sure it is anyway, I have always looked for cornstarch here (UK) and can't find it, but it seems to have the same uses as what we NAs call cornstarch....like for thickening gravy and things).  Do you think I could just add that?  I don't have any way of grinding millet up, other than perhaps putting it in some clingfilm (aka Saran Wrap) and pounding it with a hammer. Which prob won't get it fine enough for a floury powder...

Oh they look fabulous, like really good substitutes for wheat flour, the big prob is that DS can't seem to tolerate rice or potato.  So with rice, potato and oats out, it means that I am terrified of gluten grains, and leaves me soooooooo little to feed him!

Ooooh I see.....that's a bummer! You have another thread about this? I hope you get some suggestions there, as I said I don't NEED to keep J gluten free so am not strict with it etc. I really feel for you, parenting is challenging enough without having to worry about this sort of thing!

We're gluten free here too. Have you tried using polenta? Think that's the same as the US cornmeal. It's fairly easily accessible this side of the pond... Also - have you found a gluten free bread that he likes/can eat? Cos you could always make that in to bread crumbs...

FYI too - Doves Farm do a range of gluten free flour - they do gram flour - which I think is gound chick pea. Check them out...

Your creations all sound amazing (maple syrup, lavender, wow)!  Has anyone tried a veggie version?  Maybe with butter beans instead of chicken or some such?  I'm not yet up to sausages with the LO, who is currently specialising in pear-wrestling, but it sounds like a good recipe for the future.  Looking forward to testing them myself.
