Mini Muffin Fritattas

Hi

I have seen mini muffin fritattas recommended on here a few times and was wondering if anyone had a link to a good recipe that they can recommend?  Would ideally like to make and freeze a few different kinds e.g. spinach, mushroom etc (but with the same base so that she gets some variety!

Not sure that was the right recipe Ali. Maybe  :-\

BeeAnn, if it is muffins you are after then that's the recipe - worth making some even if it wasn't what you were looking for. We love mini muffins (sweet potato, bananas, sultanas and vanilla - yum!)  I think lemonthyme has a few muffin recipes on her blog then you can experiment for yourself too.
If it is FRITATA you are looking for, ie an eggy thing, I think Lemonthyme's recipe uses ramekins rather than a mini muffin tray. You could use Ali's link to look through the other recipes to see if you can find it.

Basically 1 egg per ramekin for a single serving (it will fit perfectly and rise lovely). Add a few bits of veggies, I would pre-cook things like mushrooms, spinach, green beans etc but put in raw sliced tomato, grated cheese, do as you see fit yk. Then pop in the oven until the egg raises and firms up.
