The EASY routine alone doesn't teach your baby to self sooth so that she can put herself to sleep or go back to sleep when she wakes mid-nap. For that you would need to do some sleep training in addition to the routine. Sleep training can also teach babies how to link their sleep cycles together so that at 40 mins when one sleep cycle ends instead of waking up she would start a new cycle and continue to sleep.
There are lots of FAQs to help with sleep training if you need them, or if you have one of the BW books you could have a look there.
If LO wakes early you would try to put her back to sleep. If this is not possible you would feed at the end of nap time or a little earlier. In the EASY you posted I would feed again at 10.30am but if LO has been very active or lots of crying she might need to eat a bit earlier than the 3hrs, so perhaps 10am. Instead of EASEAS your routine might look like EASAEAS. This is okay and lots of people have routines like this in the early days and for various reasons.
For her next sleep you can either time from when she woke from her nap, so 9.40 - 11.10 (1hr 30 A time) to avoid OT. Or, if you are using all the BW sleep training methods and wanted faster results you can try to get LO back to sleep for the remainder of the nap time (9.40 - 10.30) and then get her up, feed and do a full A time, meaning next nap is at 12.00. This can help with sleep training but it can also cause OT.
