HI shoequeen, sorry to hear that things are tough for you at the moment. I think you are right, that there are 2 things going on - your lo seems to be dependent on the paci, plus he is well overtired. This accounts for the major meltdown by bedtime. He needs to learn how to get himself off to sleep independently. It looks as though he is able to stay asleep for the first part of his sleep cycle, but has difficulty in entering a deeper sleep. I don't have experience of using a paci, so you may want to check out the props board too, but I don't think going cold turkey is going to be the best way for your or your lo.
If you are able to get him to have more sleep during the day, you may actually find that he stays asleep for longer anyway.
For a 3 month old, they should be getting approx. 10 hours sleep at night and 5 hours of naps in total.
Awake periods should not be longer than about 1.5 hours.
I would suggest that you keep activity times short, not too much stimulation, watch him like a hawk for the very first sleepy cue, and swaddle immediately. Take him to a darkened room, and then start to pat/sshh him while you still hold him. Place him in the crib, on the point he becomes quiet and sleepy.
If you know that he wakes at 30 mins exactly, try going in 5 mins before, place a hand gently on him , and as he starts to stir apply gentle but firm pressure, this may help to send him into a deeper sleep.
