"TOUCHY" BABY WITH SLEEP PROBLEMS!!! PLEASE HELP

My five month old would be classified as a touchy baby.  He needs to follow his schedule.  Earlier in the week he was waking up for several hours at night just talking in his crib.  I believed it to be a result of his 3 hour nap on Sunday afternoon and him not taking a 3rd nap during the day.
He is in day care full time and this is his “typical” schedule.  It does tend to vary a little by the day.  He is breastfed and I express milk for day care.

6:30 wake, eat, take to day care
8:30 eat (the day care provider says he seems hungry and generally takes 4 oz)  He never eats at this time on the weekends when I’m home with him (he usually waits until 10)
9:00 sleep
11:00 wake, eat (usually 6 oz)
12:45 sleep
2:00 wake, eat (usually 6-7oz)
4:00 I pick him up and he sometimes falls asleep in the car for 20 minutes and stays asleep for 20 more once we are home
5:15 wake, eat, play (usually fussy)
6:30 bath, massage, last feeding
7:00 sleep

Then, some nights he wakes up once to eat briefly and that is it.  Other nights (like last night), he wakes up for hours talking and wanting to play!  I tried to feed him and he wasn’t hungry.  I left him alone for 1.5 hours (he was just cooing) and then he started to cry so I changed him, fed him, rocked him, swaddled him and then he slept another 2.5 hours (I had to wake him for day care).
When I am home on the weekends I adhere to a fairly strict schedule, but I understand that is hard for his day care provider to do. 
I believe he is overstimulated.  He is with several toddlers all day long and then when he comes home I try to give him tummy time and play with him.  He seems really interested in everything even in the middle of the night.  He gets really wide eyed and excited looking around at anything.
PLEASE HELP.  We started solids (rice cereal), but it constipated him and seemed to disturb his sleep more so we stopped.  After we stopped, he slept much better.  Now we are facing these night problems!

Does he seem better at night during the weekends or when he has been in day care?

He is much better on the weekends.  This was never an issue when I was on maternity leave.  He was on the way to sleeping through the night! 
If touchy babies get a little off schedule one day, can it stongly impact their sleep a few nights later?  For instance, yesterday his schedule was what I posted, and then the day before naps and feedings were different.  For instance, he took two naps at day care (one a 945 and one at 2)!

Noy really sure what you can do(can daycare not stick with what you are doing at home?) Does he really need that feed they give him at 8.30am I would say he didn't as he only has 4 oz. Hope some else might be able to help you somemore
