Lately, it doesn't seem to make a difference whether she takes one long 2 hour nap - which tends to be in the midmorning making her A time afterwards until bedtime long OR a semi long nap plus a cat nap later on.
Lately, it seems like her bedtime is taking a long time. I spent a long time trying to teach her independent sleeping. Basically I put her in the crib and she plays and eventally falls asleep. Lately at night she screams if I leave the room, but is fine when I'm in there and she is taking until 8pm to fall asleep. Where before I'd bring her up between 6:30 and 7pm and she would play and fall asleep within 40 minutes usually. Sometimes as quick as 20 minutes.

Probably she is in that time where she is transitioning to one nap.  Even if she only takes one nap if it is midmorning she is probably overtired by bedtime so it's taking her a long time to sleep.  Most lo's when they are first transitioning can't last more than 5 to 5.5 hours after nap so on days that she takes one nap you'll have to go with a super early bedtime.  Why not try pushing the morning nap a bit and see if that helps.
