Cheese - what kind should I use?

Just wondering, when we give DS cheese (either to eat as finger food or in a recipe), should it be mild or mature cheddar?
I like the really strong cheese (Crackerbarrel) and was wondering if it is too strong DS.
I did read about Baby Bel cheese, is this a better alternative?

I would definitely go for mild, mature cheddar is much higher in salt.

I think it depends on her taste. We always buy mature or farmhouse and Ryan loves it all. Though he also has the Cheesestrings and i suspect they are milder cheedar. I would experiment. I also used to go for the cheese shapes made for children when Ryan was little so that they were a bit more interesting that just a stick.

I should have clarified, I just meant up to age 1 when the strictness on salt eases a little. After that I'd go by taste.
