Hi Nicole. Actually you can buy polenta from supermarkets - usually in gluten free products area and then make it according to packet instructions and then put in baking dish and bake until set. Also can add stuff like sultanas or vegies... Dont really have a recipe but im sure you could get one from the internet...
Also about the roast pumpkin - yes i do roast myself - cut into little 1cm or 2cm cubes and a little bit of olive oil and in the oven for half an hour. Also when im making for adults i add a little moroccan seasoning (very yum but quite salty), so up to you whether you want to add. It's so easy - i usually use a butternut pumpkin as a lot easier to chop up and peel etc but up to you of course.

My DD is 2. I have to say THE best thing we did for her eating (although she isn't particularly picky) was to all sit at the table together. We have done this for... more than a year, and she eats so well.

Here are our lunch ideas.

Muffin, or square bread pizzas (ketchup, cheese and any topping you like. ham, pineapple, sweetcorn, tuna, mushrooms etc etc)
mini quiche
soup
Leftover chicken goujons and dip
tortilla wraps
scrambled egg on toast (ketchup really helps)
Hummus, or houmous and breadsticks and/or veg/ salad
Bean salad.

Sandwiches/crackers/bagels
cheese
ham
tuna
grated cheese, grated carrot and mayo
Marmite and cheese spread
egg mayo
sausages
banana
peanut butter
avocado and cheese spread.
