 This is the one I use, its Annabel Karmel and DH loves it, its so tasty!

 15g (1/2oz) unsalted butter
 15g (1/2oz) plain flour
 150ml (5fl oz) whole milk
 30g (1oz) gruyere cheese grated
 2tbsp parmesan grated
 2 tbsp mascarpone

 Melt the butter in a saucepan, stir in the flour to make a smooth paste and cook for 1 min. Gradually stir in the milk, bring to the boil and cook for a few mins over a low heat until thick and smooth. Take of the heat, stir in the gruyere and parmesan until melted, then stir in the mascarpone.

 So embaressed that I need to follow a recipe for cheese sauce... :-[ :-[ :-[
