Using baby cereal for meat dishes

Hi all,
I tried to make meatballs yesterday for DS using baby cereal and they fall apart too easily (he can't get them to his mouth  :P).  Wondering if there is a general rule I can use for substituting baby cereal instead of bread (we are in the middle of eliminating things such as bread from his diet to see if it helps with his eczema).

For example I wanted to try the famous sausage recipe, but wondering how much baby cereal to use instead of the bread (if anyone has done it before).

Also wondering if there is a way to know if they will keep their shape before I cook them, so if I know to add more cereal and not "waste" a batch.

I am really not a big fan of cooking, and am really trying to be more adventurous, so any help would be appreciated!

I made burgers for my two yesterday with just ground pork, grated apple and chopped onion - they held together fine without any bread or cereal in them and were firm enough to pick up. What about trying with just the meat and whatever flavour you want?
