Roasting Zucchini?

My steamer pot broke! Will get a new one this weekend but in the meantime need to make DS some more baby food. Can easily roast his carrots (yum) in some foil before mashing but what about zucchini? I know I can boil it but hate to as you lose so many nutrients that way. Would it come out good roasted and then mashed too? I haven't used olive oil on him yet...

Roasted is good, but I found DS didn't like the skins when I had roasted it, whereas he didn't mind them when I steamed it.

If you don't have a steamer you can put a metal collander/strainer over a pot of boiling water and put the pot lid on top of the strainer - does the same trick.  When in a bind and only had a plastic one, I just held it above a pot of boiling water (with an oven mitt!!) so I could keep an eye on it to make sure it didn't melt!

Interesting - thanks Mashi - yea he doesn't mind the skins when roasted. Can try to rig that up with a collander - otherwise would a microwave work in a pinch?

roasted it's lovely, I do it with peppers too (although you might want to remove the skins afterwards) and mix it with couscous & serve it with some salmon- yum!

That does sound lovely Kathryn - only problem is that most of the nutrition is in the skin/peel so really don't want to remove them!

otherwise would a microwave work in a pinch?

 I haven't used a microwave in about 15 years so no clue how good they would taste!

I know - my microwave is generally solely for reheating leftovers (if even that) but will give it a go I guess!

i do a lot of baby food in the microwave. when you keep the food covered you keep the nutrients and it basically steams. cover off and you lose nutrients. i usually do one or 2 zucchini at a time. depends on how much you have and how soft you want it. I would chop in large pieces, put in a bowl with a little (very small) bit of water (which you later can just mash or puree with so nothing is lost), then on high for 4-5 min. I try to check midway through the cooking time and stir.

mashi's colander suggestion is good too - i steam all the time and i ONLY do it this way! dont have a steamer!

for roasting i roast zucchini chopped in chunks or in strips, tossed with a little olive oil (and s&p if it's for us) and roast at 200C (400ish F) for 20-30 minutes, turning once. i don't do this strictly for dylan's food though it's too labor intensive, only when it's our food anyway and he has some too. x

I started using olive oil in foods when my dd was 8 months, our ped had suggested it to get extra fats into her as she was MPI.

My favorite way of eating zucchini is to shred the zucchini (with skin) and shred some carrots (I use 4 zucchini's to 1 carrot) and I stirfry this with some olive oil. There's a lot of water in the zucchini so it stays soft, I used to make this for dd when she was quite young and I still make it for us all but now I add nuts or sunflower seeds into it.
