Would you be prepared to try doing a trial of removal of dairy from your diet?  Caleb may have Milk Protein Intolerance which can present like reflux, or make reflux worse.

Sure, anything to make him happy and feel better. He did this gasping thing in the middle of the night last night and 2 nights ago he was gurgling and making really strange noises. Also, I read that they often have mucousy stool and/or blood in the stool. He has none of the above. Could it still be MPI? What other symptoms are there outside of reflux?

You have a lot of threads going on right now, and it's hard to get a good consolidated picture to see if we can spot some things you can tweak with the information on so many boards.
