how do you know when they're ready to go to one nap? What's the general procedure for moving from a routine like the one above, to a one-nap-a-day routine?

I personally shortened up the am nap and let them have a much longer pm nap. Ours was a 10am nap capped at 1/2 hr and then a pm nap at 130pm. One day there was no pm nap after the am 1/2 hr nap and I moved the pm nap back to 12pm. It was one of the few things that was painless for us, but I'll do some looking to find the proper link for a plan for dropping to one nap.
