Query on 3-2 nap transition

Ok, so I'm pretty sure DD2 is ready to drop the catnap. She is 6 months and 1 week old and can easily handle an A time of 2 hr 45 if she is well rested. My query is - and I know this is like asking how long is a piece of string - how long does the transition generally take? Next Friday I have to go for a work lunch and the only way I reckon I can make it work is to get her to take a short nap first thing and then a longer nap at 11am, which means she will be awake and happy for the lunch at 1pm. So she will need another nap that day.

I know I am over thinking things but the idea of taking an unhappy baby to a work lunch is stressing me out! Any thoughts?

I would think of these as totally separate things ie
- going 3-2 is one thing
- having an 'off routine' day so you can go out to a planned event is another thing.

They don't need to be linked in the slightest.
My boy is 15 months and has been on 1 nap for 4 months, he still has the odd micro-nap in the car on the way somewhere.  It's fine.

Do what you need to do to get out for the lunch and deal with the 3-2 nap drop when she is ready, whether that is before, after or during next week.

^^ This!  Even after being on one nap since 11 months 1 week, my DD can pass out in the car after a mere 4 hrs of A time... her normal is 6 - 6.25 in the morning... we figure it out though :)
