karen - i tend to need to lower temp slightly for many recipes in the books.  my quantities also rarely match so am not sure what kinds of kitchens they have LOL.  last night i made a double batch of sneaky chef's monkey pancakes (a staple here) and she says 14 pancakes per recipe - i got 15 out of double batch using my standard 1/4c to pour it to pan... perhaps she does "dollar" pancakes like when i was a kid... or uses giant bananas (which is possible). i just do the recipe as directed 1st time, but watching closely, and then tweak as needed.

Which ones are those Deb - the ones that she adds banana and sweet potato to the boxed mix? If so my DD loves those - not as much my DS.

Yea, 400 seemed really high to me for baking cookies but figured I'd follow it the first time. Will make again tomorrow but do 350 or 375 and check after 12 minutes...

not boxed mix - bananas and orange puree (i used carrots!) and the flour mix (which has wheat germ).

the only one i use a packaged pancake mix is dece[ptively delicious pink pancakes which are the other staple here - i can never figure out exactly what to swap for the mix since every recipe is different and i don't know if i will have the right mix... shoudl just figure it out finally since it costs more for boxed, has packaging and has sugar which i don't usually add to  plain pancake recipes

OK so the breakfast cookies ended up a bit hit! DD has been taking one to school for snack or having one for "dessert" and DS has been accepting one for a healthy after nap snack! I followed the recipe as is except I used unsweetened applesauce for about half the canola oil (going heavy on both the oil and applesauce portions) and baked at 375 instead of 400. Then before serving to DS I pop one in the toaster for a minute cause he likes them a little crisp, but not hard. GREAT source of protein and good grains! And I did use the cinnamon sugar on top.

finally bought the book and making, quite often, the peanut butter and banana muffins and the peanut butter and jelly muffins. I feel so good about serving them! She pecks at them now and again and once in awhile she'll finish one ::) I feel guilt free eating them ;) :D
