Finger foods using beef or salmon?!

Any ideas on finger foods using beef or salmon? My little one is starting to lose weight and the nurse at the baby clinic has advised me to up her high-impact proteins - beef and salmon. The thing is my little one doesn't eat much off the spoon these days (hence the weight loss) so I'm looking for some recipes for beef and salmon as finger foods.

How about fish cakes with the salmon? Do you need a recipe?

Hi,
Attached are a couple of recipes, one with salmon and one with beef in it. Good luck.
Ok, can't attach so here are the recipes below:

Rosti Salmon Cakes
700g (1 lb 8oz) medium sized potatoes (Maris Piper or King Edward)
300g (10oz) Salmon fillet,skinned
100g (3.5oz) grated gruyere cheese
2 medium eggolks lightly beaten
2 tbsp chopped fresh parsley
1 small onion, peeled and finely chopped
salt and pepper (optional)
100 ml(3.5 fl oz) vege oil
Cook half the potatoes in their skins for 20 minutes in lightly salted water for 20 mins over medium heat. Drain and leave to cool
Cut salmon into bitesized chunks and mix with cheese, egg yols, parsley and chopped onion and season. Peel and grate the cooked potatoes and stir into the salmon mixture
Peel  and grate the uncooked potatoes, squeeze out moisture and season
Shape salmon mixture into 8 round cakes and  the press each fish cake into the raw grated potato unto coated on both sides
Fry until cooked through (about 4 mins on each side) Drain
Cakes can be frozen and thawed before cooking.

Mini Meatloaf’s

¼ lbs ground sirloin
1 egg
¼ cup bread crumbs or oatmeal
2 tbsp dry onion soup mix
   
Mix all together and form into mini loafs, top each loaf with a tsp of condensed cream of mushroom soup or top with tomato sauce.  Bake at 350 for 45 minutes.

I have a salmon fishcake receipe as well that is really quick and involves very little prep - in addition you can freeze them so I normally make a large batch in one go.

Depending on what mood dd is in I can either feed them to her or chop them up into grabable pieces.

Hi - both of my kiddos eat these right up:

Salmon Cakes

1 Can of salmon                                            ¼ teaspoon salt
2 teaspoons grated onions                             1/8 teaspoon pepper
1 egg, lightly beaten                                      ½ dill (optional)
flour                                                               8 soda crackers, crushed
oil (for frying)

1.   Mash salmon, bones and all, in a bowl with fork.
2.   Add onion, egg, salt, pepper and dill (if used)
3.   Blend well.
4.   Crush soda crackers and add to the salmon, mixing well.
5.   Add just enough crumbs to make a mixture that will hold its shape.
6.   Make patties and dip each in flour or more cracker crumbs to coat both sides.
7.   Heat oil in heavy skillet.
8.   Add patties and fry slowly until golden on both sides.
9.   Drain excess oil on paper towel and serve.

Baked Salmon

4 (4 oz) fillets of salmon
3 tablespoons prepared Dijon mustard
Salt and pepper to taste
¼ Cup Italian-style bread crumbs
2 tablespoons butter, melted

1.   Preheat oven to 400 degrees.  Line a shallow baking pan with aluminum foil.
2.   Place salmon skin-side down o foil.  Spread a thin layer of mustard on the top of each fillet and season with salt and pepper.  Top with bread crumbs, then drizzle with melted butter.
3.   Bake in a preheated oven for 15 minutes, or until salmon flakes easily with fork


Also, as far as beef goes, Zoe loves just browned hamburger - VERY easy!!  ;)

Thanks for the suggestions. The salmon fishcakes have gone down a treat and I'm going to try the meatloaf today! Thankfully my lo seems to be taking a bit more off the spoon these days as long as she can do it herself!
