Hi - both of my kiddos eat these right up:
Salmon Cakes1 Can of salmon ¼ teaspoon salt
2 teaspoons grated onions 1/8 teaspoon pepper
1 egg, lightly beaten ½ dill (optional)
flour 8 soda crackers, crushed
oil (for frying)
1. Mash salmon, bones and all, in a bowl with fork.
2. Add onion, egg, salt, pepper and dill (if used)
3. Blend well.
4. Crush soda crackers and add to the salmon, mixing well.
5. Add just enough crumbs to make a mixture that will hold its shape.
6. Make patties and dip each in flour or more cracker crumbs to coat both sides.
7. Heat oil in heavy skillet.
8. Add patties and fry slowly until golden on both sides.
9. Drain excess oil on paper towel and serve.
Baked Salmon4 (4 oz) fillets of salmon
3 tablespoons prepared Dijon mustard
Salt and pepper to taste
¼ Cup Italian-style bread crumbs
2 tablespoons butter, melted
1. Preheat oven to 400 degrees. Line a shallow baking pan with aluminum foil.
2. Place salmon skin-side down o foil. Spread a thin layer of mustard on the top of each fillet and season with salt and pepper. Top with bread crumbs, then drizzle with melted butter.
3. Bake in a preheated oven for 15 minutes, or until salmon flakes easily with fork
Also, as far as beef goes, Zoe loves just browned hamburger - VERY easy!!
