Taking 2, 8 ounce bottles a night - 9 months old - HELP!

Alex is a few days short of 10 months now, and we recently had a big upset in the family. Grandma came to visit, Daddy came home from a deployment early, and Mommy was sick for a few days....so after all that, Alex's schedule went down the drain. Before he would sleep from 8-7 no problem, with 2 1.5 naps during the day. Now we are slowly working on getting our day routine back on track, but nighttime is all messed up. Alex regularly gets up 2-3 times during the night to eat. He will suck down a full 8 ounce bottle and then go back to sleep happily.  I don't know what to do to change this. He eats pretty well during the day, but we have a hard time getting him to take solids. He would rather have a bottle. I have a suspicion the problem is that he is not getting enough calories during the day, but I don't know how to go about correcting this. I read a post on another forum talking about substituting water for the formula little by little at night. Should I do this, or encourage more bottles during the day? I'm at a loss.
