I have a brilliant baby/toddler food book that was my bible when I was introducing new foods to DD. One of her/our favs was mediterranean pasta (suitable from 6 months).
You need ...
30g (1 oz) mini pasta shapes
125ml (4 fl oz) water
30ml (2 tbsp) tinned chopped tomatoes
1/2 onion, finely chopped
1 courgette, trimmed and sliced
1/2 red pepper, chopped
pinch, dried basil.
Place the pasta, water, vegetables and basil in a saucepan. Bring to the boil, reduce the heat, part cover the pan and simmer for 10 minutes or until the pasta and vegetables are soft.
Mash with a fork or puree until fairly smooth.
Serve lukewarm.
That makes roughly 6 portions.
Can be stored for 24 hours in a fridge, or 4 weeks in the freezer.
Good sources of vitamin c, complex carbohydrates and potassium.
Its really quick and easy and DD loved it - so did I! Tastes good!
