Poor napping in the early PM and evening

My 8 week old used to be a really great sleeper on a 3-4 hour EASY. No nap or sleep problems whatsoever, unless his routine was thrown off from travelling. In the last 5 days he has started to nap very poorly in the afternoons which rolls into the evening. This is a daily occurrence.

Here is an example of a typical day:
8am- E
930am -S
11am- E
1230pm- S - This is one of the problem naps
115pm- wakes up, very upset and nothing calms him or gets him back to sleep - he also appears hungry
130/145pm- E
215- S, is put to bed because he is so overtired. This nap is no problem
430- E, and has to be woken for it
530- S
615- wakes up again This is when the trouble starts again - with eating and sleeping
After this we will feed him, give a bath, try and top up, and then he goes to sleep for 20 minutes. Then he wakes up, acts as though he wants to eat and will continue this every 1.5-2 hours until 10pm at which time he takes a decent feed and goes down for the night.
At night, he sleeps from 10 or 11pm and wakes once in the middle of the night to eat.

My husband and I don't know what is going on. He is not ill, having a growth spurt, and the only 'milestone' is that he has learned how to bat at toys, but I don't consider that a milestone that would hamper his sleeping - or would it? We also are consistent with making sure he sleeps in his crib and falls asleep in it by himself - which he is pretty good (he actually falls asleep better when we aren't in the room).

Any suggestions?!?! We are so frustrated...

No, he had his growth spurt last week at 7 weeks old - it was 2 days of eating every 2 hours. He also had one at 5 weeks for one day.
I will try wake to sleep. If it doesn't work, would adding an A before the next E work?
