Can anyone suggest a way to prepare sweet potatoes so that the whole family can enjoy them??

Mash them!!!  Thaqts how I do it and its yummy...  you don't even need to add milk or butter, but if you want to you can and then they are just a little more creamy.  mmmmm :)

This might sound odd...but sweet potatoes are new to me. Just boil and mash, what types of things do you serve them with??

I am not a sweet potatoe fan myself but my inlaws make them one way that EVERYONE will eat them.  You peel them, boil them as you would normal potatoes.  Then you mash them with a bit of butter and maple syrup.  Put them in a dish that is suitable for the oven and cover the top of the them with marshmallows (YES marshmallows).  You only need to put the dish in the oven for a few minutes until the marshmallows brown ontop like if you were roasting them on the fire (keep an eye on them though because they will start on fire just like over a campfire!  I've seen it happen!) .  They are sooooo yummy!  The marshmallows form a crispy candy like coating on just the outside so they are very tasty yet you still get the nutrient value!  Yummm!   :)

Another way I will eat them is peel and slice the s.potatoes.  Mix with some oil, garlic powder, onion powder and basil.  Put in a baking dish in the oven at 350 for about half an hour!  IF you vary the amount of oil you can make them more like fries or more like roast potatoes.  I usually make a combo of white potatoes and sweet potatoes.

I love making them just like baked potatoes. Prick the skin with a fork and microwave or bake just like a baked potato. When you split it open, you can put all kinds of yummy stuff in there...butter, cinnamon, brown sugar, maple syrup, or just leave it plain!

Also, just like chips - except sweet pot instead of pot and they don't take as long.  great as finger food for lo's.  I also, loved baked with butter and a little cinamon sugar - easy in the microwave too.

I cut them into little cubes 1" x 1" (a bit OCD, I know...) and then sautee with other veggies, cauliflour, onion, etc.

They're also very good mashed/whipped half sweet potatoes, half white potatoes.

You can "twice bake" them with some brown sugar on top. Oh yum....

how about sweet potato quesidillas (I think it's spelled wrong)?

Basically just boil and mash the sweet potatoes, then add some sauteed onion and garlic and what ever other cooked vegetables you like, I like small pieces of broccoli,  corn, mushrooms. Then add a dash or chili powder and cumin and mix it all together.  Spread it on a soft tortilla, put cheese on top and then another soft tortilla on top.  To cook you can either bake in the oven on a cookie sheet until it browns, I like to spray a little pam on it or fry in a frying pan (I don't), or for my son I just microwave some so that  it is easier to chew for him.  Serve with sour cream or salsa.

We love them, and it's really hard to go wrong, pretty much put in what you like.

We cut them in wedges longwise, drizzle with olive oil, and bake them like steak fries.  We sometimes garnish with fresh rosemary and sea salt.

I also like them just baked.  They're usually huge, so I bake them and serve them cut in 3/4" rounds.
