The Famous Sausage Recipe!
« on: September 15, 2007, 15:32:18 pm »
Hi - I saw a great recipe for chicken fingers/frittatas as finger foods for young babies (6-9 mos), but can't find it any more!!!  I looked in the post in FAQs, but it's not there, which is where I thought I saw it in the first place...hhmmm...Can someone help me locate it?  It looked so yummy & my DD is ready to start feeding herself!

thanks

It's all over the place ::), first mention on page 1 of the BLW support thread, paragraph 3 of my long post about half way down! But easier if I just post it here :)

2 chicken breasts
1 eating apple (peeled and cored)
2 slices bread
1 medium onion
some fresh herbs of your choice (thyme works well)
flour

blitz apple in food processor, squeeze out excess juice, return to food processor and blitz with all other ingredients until really finely blended, shape into burgers or sausages, coat with a little flour, pan fry in a dribble of olive oil or bake in oven until cooked thru.

Variations could be pork, apple and sage, and lamb and mint,

Thank you so much!!  Should the chicken be raw or cooked?

It sounds really good, might need to make some for myself as well!

Food process the meat raw otherwise it won't combine!

They're sooooooooooooooooooooooooo yummy, make loads and freeze them, you can cook them from frozen by reheating in a minute in the microwave, so a really good, nutritious fast food in those emergency 'omigod, what shall we eat?' moments ;D! just microwave a (jacket) potato and a handful of frozen peas - dinner from scratch in less than 10 minutes - brilliant!

So they microwave really well from frozen?   Would I put them on defrost first then High, or just go for broke and put the micro on hi?

Thanks

Ok, so I made these sausages tonight (less the onion, didn't have one at home), and they were yummy!  DH & I shared one, and were tempted to have another one  ;D  Will see what DD thinks tomorrow for lunch.  Thanks again for the recipe.  It was soooo easy.  Will definitely try to make the other variations as well.

Um, I just blast it on full power for a minute (for one sausage - they're quite large) and still my finger in the middle of it to check it's very hot before cutting up and serving when a bit cooler - not sure if this is recommended :-\, but we've been ok so far :P

i used chicken, thought the taste of chicken, apple and maple would be good together (and they were ;)) didn't put in any fresh herbs as all i had was basil and that didn't sound good. x

My boy looooves these!!! I put a bit more apple (he has a sweet tooth) and put fresh garlic, fresh thyme, fresh rosemary (chopped very fine) and a sprinkling of lavender. I fry them up in a little olive oil and soy margarine (milk protien allergy).  Mmmm I love them too!

can I ask a quick question - if I wanted to make up a batch, freeze them and then cook them in the oven - should I defrost them first or cook em from frozen?

I just make them, cook them, freeze them and then blast them from frozen in the microwave for about 2 minutes to make sure they're piping hot :)
