finger foods past a year....need some Ideas
« on: October 18, 2007, 00:28:42 am »
ok, I've gotten into a rut oficially.  he has the same thing everyday!  I don't usually "cook" for lunch but after move I may start because I need some other things to give him.  Anyone who has some Ideas would be great!  I am trying to build some recipies to try.

quick fix ones would be really appreciated too, because I like that kind of stuff for lunch.

Never underestimate the power of the frozen veggie burger!!!

Also silken tofu, extra firm, simmered in chicken broth for flavor...sprinkle with parmesean...voila!

We do a lot of sandwiches for lunch. Sometimes I cut it into bits, sometimes I let her gnaw on it. Thinned nut butters, hummus, mashed avocado, or good old grilled cheese are my standbys. Also, whenever I make pasta for dinner, I always make lots of extra and freeze the leftovers in little Mackenzie-sized portions. I just pop a serving in the microwave and there's lunch!

Tinned tuna, pasta spirals (with or without pesto) and cherry tomatoes seems to be the favourite here at the moment, but anything on this theme really - what I would say is that what seems dull and repetitive to you might not be so for your lo, Freya has been eating cheese or ham or tuna pasta salads for lunch for the past 2 years and still enjoys them!

As a warm lunch we often do scrambled egg and baked beans on toast, or a cheese and (softened) vegetable omelette:

fry some diced red onion, red/yellow/green pepper, and mushrooms in a tiny bit of olive oil over a medium heat until softened, set aside,
beat 2 eggs until frothy and place in hot pan,
when the base has set but the top still runny put the veg on top of one half of the circle,
sprinkle some grated cheese on top, fold the other half of the circle over the top to form a semicircle omelette sandwich,
flip over after a couple of minutes, cook for another couple of minutes then serve in strips or squares,
whatever's left over you can eat or refridgerate until the following day!

Yummy!
