Sorry am a bit confused.
Do you mean aubergine / eggplant that you sliced up into big round disks and pan fried? Or do you mean swedes as in the turnip family?
You use the word burn? Do you mean more red and rashy, blotchy or some hives?
Do you have any allergies, it is weird your hand turned red too?
Aubergine/eggplant is in the nightshade family and many experience allergies to these fruits/veg in that family. Canola oil is from rape seed/pollen so there are some people that experience allergic reactions like hay fever and other symptoms. If it was swede/turnip, I don't think that is a high allergy food, more guilty of casing wind!
Sorry not much help, but need more info. How old is Jake, does he have any other food allergy or intolerances?
