I am looking for recipes for healthy vegetable/fruit breads that my kids would eat.  Any ideas?

Marking so that I can have a look at my bread recipe book at home later. Do you use a bread machine or do you make your own by hand ?

One of the reasons why I use a bread maker is because I know what goes in my bread, as my DS loves his sandwiches

I used to have a bread maker, but I never really used it.  Now that I have los though, I'm thinking about going ahead and investing in a new one.  I don't make bread at all right now, so I'd have to learn either way.
Any ideas would be great!

I have a lovely recipe for banana bread - it's designed for a breadmaker.

125ml water
1 large beaten egg
2 tbsp vegetable oil
2 tsp salt
2 tbsp demerara sugar
3 ripe bananas, mashed
100g jumbo oats
225g soft grain strong white flour
1 1/4 tsp instant or fast acting dried yeast

Pour water into the breadmaker bucket, followed by egg, oil, salt, sugar and bananas. Top with oats and flour. Finally sprinkle yeast over. Fit bucket into the breadmaker and set to the basic white programme. As the moisture content of bananas varies enormously, check the dough during the 2nd kneading cycle and make any necessary adjustments (I usually need to add a bit more flour). The dough should be moist but not runny.

Cinnamon raison bread
dill bread
egg bread - I make that all the time
french bread
honey granola
light rye
limpa bread (no idea what that is)
milk bread
oatmeal bread
onion bread
orange bread
pesto bread
pumpernickel bread
sesame bread
spicy bacon bread
sunshine nut bread
whole wheat bread
mixed fruit bread

If you let me know which ones you like, I'll give you the list of ingredients and settings for a bread maker.

Thank you!  I would love to learn apricot and mixed fruit breads! 

So, a sort of related question. If I get premade pizza dough (frozen or refrigerated) and then blend in stuff like spinach and garlic, spread it out on the pan and then bake it like a pizza dough, will that work or will it get too soggy? 

As you can all probably tell, I'm trying to trick my kiddos into eating more veggies!

um can I ask what the book is you have?  I am going to be getting a bread maker and starting to make breads and it seems like you have THE bread making recipie book!!!  so I want to get the one you have!

I just thought about this thread today as I am getting my mom's breadmaker soon.  are the recepies in your book made with milk?  if not then I think I want a copy of it.  DS is MPI and we are finding he is very sesitive to butter so I need some recepies for him.

Doves Farm make a gluten free bread making flour - it's readily available in the uk, they also make a plain and SR gluten free flour for baking - you just substitute it directly into recipes (but sieve it 4-5 times rather than just once!)

May I ask if having a breadmaker worth it?  If so, what brand and model do you have?  I love fresh bread and would like to try different variations instead of the plain reg. white/whole wheat bread. 

PS Sophie, you might just have to share your recipes with us lot.

Thanks Freya's Mum. I am in Australia but have bought plain and SR gluten free flour I just wasn't sure if they could be directly substituted into recipes.

Sorry, I forgot about the thread - too much to remember at the moment.  Here are the recipes:

Apricot bread

1 egg + enough water to equal 250 mg (8.75 floz)
bread flour = 460 g (1 lb)
Salt - 1.5 tsp
vegetable oil = 2 TBL
apricot preserves = 80g (3 oz)
old fashioned oatmeal = 70 g (2.5 oz)
yeast (dry) = 2 tsp

after the first kneading, add:

dried apricots, cut up = 70 g (2.5 oz)
chopped pecans = 50 g (1.75 oz)

Programme for a LG breadmaker: rapid ie 1.59 min
Makes a 1.5 lb loaf

Egg bread (my everyday bread)

1 egg plus enough water to equal 200 ml ( 7 floz)
bread flour = 350 g (.75 ob)
salt = 1 tsp
sugar 1.5 TBL
Nonfat dry milk + 2 TBL
Butter or margarine = 13 g (.5 oz)
Yeast = 1.5 tsp

Rapid programme for LG breadmaker = 1.59 min
Makes a 1 lb loaf

Mixed dried fruit bread

1 egg plus enough water to equal 230 ml (8 floz)
bread flour = 420 g (1 lb)
all bran cereal = 80 g (2 4/5 oz)
salt = 1 tsp
nonfat dry milk = 2 TBL
honey = 40 g (1 2/5 oz)
butter or margarine = 26 g (4/5 oz)
nutmeg = .5 tsp
vanilla = 1tsp
yeast = 2 tsp

add chopped nuts after the first kneading (60 g - 2 oz) ie after 7 min)

rapid programme again
prduces 1.5 lb of bread


Melissa, recipes without milk are:

- apricot bread above
- limpa bread
- pesto bread
- pumpernickel bread
- sesame bread

Usually, 2 or 3 TBLs of nonfat dry milk is required

Mimi: go for it, it's great to have fresh bread whenever you want. It's a bit of a chore to do it every day but you can always freeze the slices. I have a basic LG breadmaker but it does the job. You can also make doughs and cakes but that is a bit of a waste of a breadmaker because you only use the machine for baking

Got a breadmaker today.  Gonna try the egg bread right now.  Hopefully we will have fresh bread for lunch.  DD was helping me with the flour and I think that she got more kick out of playing with it than helping me.
