Healthy Alfredo sauce?!?!

I've just learned that my daughter LOVES Alfredo sauce.  She has always loved pasta, and I make her a meat sauce with ultra lean ground beef, tomatoes, carrots, and the "sneaky chef" green puree (spinach, peas and broccoli).  I also only use whole wheat/whole grain pasta.

I am always very concerned about feeding Zoey healthy foods.  I would love to make her an Alfredo type sauce that was not as high in fat as traditional Alfredo sauce and also had some form of veggie "hidden" in it.  Zoey loves fruit but is not overly crazy about veggies.

Does anyone have a sneaky or just healthy recipe for Alfredo/white sauce???

You know all that high fat stuff is good for kids cause they are growing.  And you can put in any veg you want really.  My sis would grate carrots into the alfredo sauce.

Maybe pureed cauliflower would 'dissapear' well?  Grated carrots, zucchini, and squash are popular at my house.  We also enjoy steamed broccoli florets with asparagus-stuffed ravioli.  Sauteed red and orange bell peppers go well too, but might be too strong a flavor for her little palate.  One thing that I do with Alfredo sauce is cut it with fat-free milk, so we still pretty much get the flavor we love but with less fat.

I agree the fat is good for children. Children, especially tots shouldn't be on a "adult healthy diet" The need the fat for growth and brain development, its one of the main reasons parents are told to use butter, whole milk, and other higher fat foods. They also tend to burn off more then your average adult.

Eating healthy for a child is a lot different then eating healthy for an adult :)

If your worried about salt, just add less when you cook, and by all means add veggies if you like. DD loves her's with chunks of broccoli in it. She loves meat sauce too but is no longer allowed to eat them cause of a tomato allergy :( I'm hoping she grows out of it like I did :)
