I was emailing Aleesa (aly mac) this recipe so thought i would share with everyone while i was at it typing away
. this is a recipe for very healthy pumpkin pancakes using pumpkin puree (not pumpkin PIE canned stuff you can get in america - either friesh pumpkin that is cooked or tinned pumpkin puree). i am still trying different recipes that have added fruit or veg and this one went down a treat - alex who eats ZERO veg and about 1 fruit serve per month
ate 6 of these for dinner one night! they are not very sweet and i just called them Orange pancakes since the pink pancakes from deceptively delicious were such a success

2 cups all purpose flour
3 TBS brown sugar
2 tsp baking powder
1 tsp baking soda
1 tsp allspice
1 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp salt
1 1/2 c milk
1c pumpkin puree
1 egg
2 TBS veg oil
2 TBS vinegar
In a separate bowl mix together the milk, pumpkin, egg, oil and vinegar
Combine the flour, sugar, baking powder and soda, spices and salt and stir into the pumpkin mixture just enough to combine
Heat a lightly oiled griddle or frying pan over med high heat
Pour or scoop batter onto the pan using approx 1/4 c for each pancake. brown on both sides.
I used just under 1/4 c per pancake and got 22 good sized fluffy pancakes (they pop right up and even the very 1st pancake came out perfect - very easy recipe and the girls have had them warm and cold from the fridge and love them. ENJOY!
