I even opened a jar for Rory with one hand and my knees.
Talk about a time saver, the let down was much quicker   ;)

I just can't wrap my brain around pumping and nursing at the same time, let alone opening jars!!!!

It's a lot easier than you'd think (well, wouldn't know about the jar bit ;) ).  For me, as soon as my pump is in "full swing", I don't need to hold it so that gives me both of my hands free (I always prop Mae up so I don't need to hold her) and that means that I can read to Sophie etc - lap space is somewhat limited though :P

for those of you who pump one 1 side and feed on the other...i usually feed on both sides but i would like to figure out some ways to get more pumping time in.    If i started pumping and feeding at the same time, a couple times a day, would that effect the milk to my LO or would my body adjust to this after a day or two?

Your body should adjust.  I remember a couple of weeks ago, I pumped at 11pm as usual but Mae woke at midnight for a feed (unusual for her).  I'd only stopped pumping 30 minutes earlier and had completely emptied the breasts.  The feed took longer than it would normally have done but she still got enough!  As long as your baby isn't too impatient, you *should* be able to pump one side and feed off the other...  (correct me if I'm wrong anyone...)

Yes that should work, but you may have to shorten your feeding intervals at least for a while as your baby isn't getting a complete feed compared to what they're used to.

Going on the theory that the pump is less efficient than your baby, you could feed off one side, pump off the other then put your baby onto the side you just pumped from.

Or you could feed one side, then switch sides and pump the first side. Then baby is getting a full feed.
