Sandwhiches

My LO right now is living off sandwhiches and rice and I am in need of some new ideas.  For the sandwhich filling it is either peanut butter or cream cheese with jam.  And the rice is mixed with yogurt and some kind of curried veggie.  What else can I do?  He can  be way picky.  He loves fruit and bread and pasta and cereals.  Not a big fan of meat and veg.

My DD is a big sandwich eater too, although she seems to be stuck on PB & J right now  ::). One thing she has liked in the past though is chicken salad made with grape halves, mandarin orange pieces, and/or little pineapple chunks mixed in with some mayo. My mom makes this using half mayo and half plain yogurt, and it's good that way too. HTH  :)

god i wish my ds ate sandwiches!!!! he is super picky and it is very frustrating!!!

DD likes grilled cheese (and I can sometimes slip a piece of meat in there too) and quesadillas with beans and cheese.

Avocado is very healthy...you could mash it and spread some on the bread.  My LO loves that just as it is, but if he's picky, you could also add something sweet like applesauce or other thin fruit slices OR go the savory route with sliced turkey.  You can also layer real fruit on there with the cream cheese - blueberries, thin sliced strawberries, pears, etc. work well.  If he likes pasta dishes, you could always do a kids version of a meatball or chicken parmesan sandwich and spread the bread with the tomato sauce and fill with thin slices of the meat, melted cheese, etc.
Just some ideas - can you tell we love to cook (and eat!) around here?  :)

Egg salad was a bust.  Avacado had mix reviews {ate about half and threw the rest on the floor}.  We tried grilled cheese with tomato slices, loved that.  Now on to trying the quesadillas with beans and cheese.  The chicken parm sandwich sounds yum too so will have to try that too.

When I make chicken salad for "adults" I put some apple juice in the mix as well.  Not a ton by any means.   Not sure how everyone feels about it for lo, but if you are desperate the extra sugar might help a bit.

doe he like cheese? DD has no problem with meat so she has some turkey (maybe try a very thin...deli slice of meat so it isn't over powering for your LO?), provolone, miracle whip on each slice of bread. I then put some baby spinach leaves on top (remove the stems) and top it off with some poppy seed dressing. She LOVES it..I think mainly the sweetness of the poppyseed dressing & miracle whip helped a lot. :)
