Anybody use coconut milk?

DD and DS are both intolerant of dairy.  We normally use rice milk, but I was thinking of trying coconut milk.  I was just wondering if anyone here uses it as a milk substitute.  If so . . .

--how does it taste?
--does it work well in baked goods, etc?
--does it have better nutritional value than rice milk?

Hey there:

I would not use it as a main source of milk for them, but add 2 oz. to the rice milk to make it full fat like whole milk is.

I have baked with it and also made pudding with it. 

Taste great, both Zach and Tyler liked it in their bottle. 

I deft. would not use it in place of rice milk though, because it does not have the vitamins and calcium that rice milk is enriched with.

We use Gyro Brand!

Tyler - 17 months.  My very very spirited little boy.  Can't turn your back for a minute.  He is doing the cutest things now!  Loves to eat and climb!
