Is animal fat bad for them?

Both dd (4yo) and ds (1.5yo) seems to take a real liking to the fat in the meats.  Or the skin of chicken or ducks.  I used to trim off the fats or take the skin off but they ask for them.  Is it ok for them to eat them even in moderation?  A good example of the amount of fat/skin they eat is the skin off the drumstick (sometimes 2) about 2X a week.  Both of them are pretty slim so I'm not too worry about them getting overweight but I'm concern about cholesterol.  Can children get high cholesterol?

I've actually heard that animal fat is good for their brain development!  I don't think you really have to worry about cholesterol too much if they're only eating it a few times a week.

The way I understand it, animal fat IS good for them developmentally, but I would caution you to only serve them the fat from organic meats and poultry. 

In non-organic meats and poultry, the injected hormones and antibiotics they treat the animals with tend to accumulate in the fatty tissue, so that part of the meat is actually very unhealthy for children (and adults!) to eat.
