Soup in a mug is a great idea!

We had homemade pumpkin soup tonight and it was so thick I could dip the toast in and it stuck really well to the toast so Leo could eat it.

Vegie slice
1 red capsicum, diced
2 zucchini, grated
2 carrots, peeled, grated
400g cannellini (butter) beans, rinsed drained
250g low fat ricotta cheese
1 tablespoon self-raising flour
2 teaspoons smoked paprika (didn't have so used nutmeg  :P )
3 eggs, lightly beaten

combine vegies and capsicum in a bowl, whisk ricotta, flour and paprika in a separate bowl until smooth. Add eggs to ricotta mixture and mix well. Add ricotta mixture to vegies and combine.
Pour mixture into pan and bake for 45 minutes or until a skewer comes out clean. Cut into pieces.

I think you could do a lot with it!

oops! I just updated the recipe above. I had 1 tablespoon of paprika instead of flour.  ::)

I think it could do with a little tweaking, so if you are handy at that kind of stuff and can think of something to change, let me know. I wouldn't mind if it stuck together a bit better. I've just realised how off my oven was in temperature (don't know why it would be, it's only 2 years old) but now I am at least working with the right temp.  ::)

I just bought a vegetable pancake from a fast food shop at the shopping centre and really liked it. I think it was deep-fried or at least pan-fried,  although it wasn't too oily. But I reckon I could make one at home, with shallow frying only.  It was really nice, thick, and stayed together well.  Leo loved it. It didn't flake apart either.

Actually that makes me think that perhaps there is an error in the vegie slice with only 1 tablespoon of flour...
