Yep, I cook it and then puree it. then I put it in between 2 pieces of bread and put in a hot pan with olive oil. Then use a spatula to help flatten it down. With pureed sweet potato in particular it holds together well.
I don't think there's a problem with freezing it. it's like cooking a beef casserole then freezing.
Interestingly my DS is much more into being spoon fed lately, which is just as well, the carers at day care today spent all day feeding him by spoon
