Date Flapjacks
130 g oats (mix of rolled and fine)
200 g pitted dates
A few tablespoons of apple juice (enough to keep the dates moist, not wet.. the consistency of putty)
2 egg whites
Cinnamon to taste
1tbsp oil
90 g raisins
Heat oven to 180* and grease tin with a little oil. Simmer all dates and a few spoons of apple juice until dates are soft. Blender dates and apple juice. Mix in oats, cinnamon raisins and date mix then fold the egg whites. Add a little oil to the mix and push into the pan. Cook for 8 – 12 mins, until it looks done!
