Do you have a dairy and egg free cake recipe?
« on: October 21, 2009, 15:19:56 pm »
I thought there was one posted here but I can't find it now.  Does anyone have one that's not chocolate?  All my Google searches have come up w/ chocolate recipes.
Thanks!
Jena

This is the one that I used for Dylan's first birthday a couple weeks ago, and it ended up being delicious!

Cake:
3 cups cake flour
1 3/4 cups sugar
1 1/4 cups water
1/2 cup shortening
3 T water, 3 T canola oil, 2 tsp baking powder; mixed together
1 tsp salt
1 1/2 tsp vanilla extract

Preheat oven to 350 degrees.  Grease and flour two cake pans.  In a large bowl, combine all ingredients.  Using an electric mixer, beat until well mixed, about 4 minutes.  Pour batter into cake pans.  Bake for 40-45 minutes, until cake tester inserted in centre comes out clean.  Cool in pans for 10 minutes before removing to wire racks.

Frosting:
1/2 cup milk free margarine, softened
3 cups unsifted confectioners sugar
1/4 cup water
1 tsp vanilla extract

Beat margarine on medium speed in a large mixing bowl until softened, about 1 minute.  Add remaining ingredients.  Beat on low speed until ingredients are moistened.  Beat on medium speed until creamy.

Good luck!

You can substitute bananas or tofu for Eggs and use a soy or rice milk instead of cows milk as well, at least this way you can bake whatever kind of cake you would like.
