can you freeze tofu?

wondering if anyone knows if you can freeze tofu.  i give my lo soft tofu mashed and mixed with veg or fruit so she gets protein but it comes in big containers so she has to eat a lot of it in a couple days before it goes bad - would be more convenient to freeze it and use it a cube at a time.  has anyone tried this?

You can freeze tofu but the texture will change because there is so much water in it. It will not be creamy/firm when you defrost it, but since you are mixing it with fruit or veggie (pureed?) it might end up ok. You can always try a small piece from the container.

I freeze silken tofu and the texture changes considerably.  It gets very chewy.  It's fine, but I have to mix it with DS's food after it's been frozen (rather than him devouring the fresh stuff as a finger food).  HTH!

ok thanks - i may try it with a little piece.  yes i am mixing it with veg puree, but she wouldn't be able to handle it if it's very chewy.  8 mo...gag reflex...

I actually do this with tofu for us since it holds up way better in a stir fry after it's been frozen.  It's definitely chewier, though, and I would bet it's going to be harder for her. 

Maybe you could blend silken tofu with the veg puree and freeze the mixture?  I bet that would work since the tofu would be in very small bits.  :D

ok i tried your suggestion and it worked out quite well - i mashed the tofu with applesauce and froze that in cubes and it was fine.  dd2 ate it up.  i think i will do this as it's more convenient than using up a whole block of it all at once.

ps - we freeze tofu and actually prefer the texture. what's nice is you can scramble it which we all like.

what do you mean by scramble?  cook it like scrambled eggs?  with veggies etc in a frying pan...

yup, exactly. once you freeze it you can crumble it fairly easily. we then scramble it the same way as eggs. the technique is more stir-frying, but it comes out like a scrambler. for dylan (9mo) i will shred some veggies (carrot, apple, courgette, etc) then start with heating grated onion in a little oil, adding veg, and then tofu. you can season however you like, and we often finish with a little grated cheese.  it is more for him because he doesn't eat egg white yet, but the whole family likes it. x
